A technical masterpiece port undertaken by the fine folk at Angel Studios famously fit two CD Roms onto a single 64MBIT cartridges with insane compression techniques. It also featured a range of extras not available on other ports at the time. Although not the definitive port of the game, it's definitely the most unique. This week in RE history, Resident Evil 4 dropped on PS2 in 2005.
